Triple Berry Liqueur

Blueberries, Rasberries and Blackberries, slightly crushed
Vodka just enough to cover fruit

Age 2-4 weeks.  Squeeze berries in cheesecloth to remove alcohol and filter all liquid.
Add simple syrup (white sugar & water in equal parts) to taste.
Age additional 2-4 weeks for best results.

Chocolate Liqueur

Vodka & Everclear (50% alcohol)
1/4 cup chocolate nibs
2 vanilla beans, split

Amaretto

Vodka & Everclear (at least 60% alcohol)
1/4 cup apricot seeds
5-6 dried apricots, cut into pieces
1 vanilla bean, split
1/4 cup almonds, crushed

Spiced Orange Liqueur

inspired by Coney Island Albino Python Beer

Vodka
Orange peel
Oranges
Grated ginger
Crushed fennel seed
Honey

Ginger Liqueur

Vodka
Grated fresh ginger
3" stick of cinnamon, broken in pieces
1/2 vanilla bean, split
Raisins
Cardamon seeds
Whole cloves
Apricot seeds

Amaretto

1 cup water
1/2 cup brown sugar
1/2 cup white sugar
3 cups vodka
1 tablespoon pure almond extract
1 teaspoon pure vanilla extract or 1/2 split vanilla bean
3 dried apricots, cut in quarters
5 apricot seeds

Simmer water and sugar until all sugars dissolves.  Let cool.  Mix all ingredients.  Can be consumed immediately without apricots and seed; or age 3-4 week then remove apricots and seeds.

Coffee Liqueur

2 cups double-strength, french-pressed coffee
1 cup sugar
2 cups vodka
1 tablespoon chocolate liqueur
1 split vanilla bean

Add sugar to coffee while hot; stir until it dissolves.  Cool and add reamining ingredients. 
Age 3-4 weeks.
